Today I’m going to talk about how to make my moms recipe on Dirty rice for 30 people.
INGREDIENTS:
3lb of Ground Beef
2lb of Pork Sausage (Jimmy Dean)
2lb of Chicken Livers
8 Tablespoons of Worcestershire Sause
2 Green Bell Pepper (Diced)
2 Onions (Diced)
8 Stalks of Celery (Chopped Fine)
8c Cups of Rice (Your choice) (My mom uses Minute Rice)
2B Green Onions (Thin cut)
6 Teaspoons of Minced Garlic, Salt, black pepper, and Cayenne pepper to taste
2 32oz of Chicken Broth
4 Teaspoons of Cajun / Creole seasoning to taste
1 Cup of Water
1 1/2 Teaspoon of Sage
8 Bay Leaves
2c Fresh Chopped Parsley
INSTRUCTIONS:
In a Large sauce pan brown sausage, beef, and livers until no more pink. Then drain all but 4 tablespoons.
Add Bell pepper, onions, and celery. Then cook for 10-20 minutes until soft.
Add rice, green onions, and garlic. Then continue cooking for 1-2 minutes until rice begins to toast.
Add Worcestershire sauce, beef, and chicken broth.
Add all seasoning and bay leaves. Mix well, turn heat to low, then cover and simmer for 15 minutes until rice is fully tender and broth had been absorbed. Stir well, remove from heat, add parsley and mix, then serve.
